Soba noodles are made from buckwheat grain. Jenn, on the left, is eating wheat noodles. They are a lighter color and have a blander taste. Buckwheat noodles have a distinctive taste. If you like buckwheat's robust flavour, the buckwheat tea will appeal to you. I liked both!
We were eating noodles made by the shop owner who was in his late 60's. The shop was built by his grandfather and has been making and cooking buckwheat noodles for 5 generations. His grandson is working in the kitchen and learning how to make those wonderful noodles.
